New wall treatments and how to attach on a 80 Mainship Trawler

Spring is upon us and the Admiral wants to spruce up the interior of our floating home away from home. Currently in the V Berth there is white carpet lining the walls and ceiling. This also is on the walls in the salon. I could just have a carpet guy come in and replace what's there with whatever my better half wants but thought what about alternatives? The curvature of the walls in the V berth makes me think some kind of cloth, (maybe felt or similar flexible treatment) so that whatever goes there follows the form of the glass but if I was to put something other than carpet how would I attach it and keep it from smelling like glue after the fact. Boat is located in the Bronx so whatever is used need to be able to withstand freezing as well as humidity in the summer months.
 
I had the same carpet on ours and the salon also had it on the ceiling. I removed it all and sanded all areas. The salon ceiling was sanded using 200 grit and finished with 600 grit and was then painted. The salon walls are now teak. The v-berth walls are now vinyl SeaGrass and the ceiling is painted. I will be covering the v-berth ceiling with headliner carpet (Sailrite) and there are different spray adhesives you can buy just for this purpose. The sanding part took a while but was worth it.

What did or what are you planning on using for an adheisive for the sailrite carpet. Did the vinyl seagrass have adhesive on on the non seagrass side?
 
For the Sailrite headliner carpet I will use 3M Super Trim Spray Adhesive. I used this combo on a previous sailboat and plan to use it again.
For the SeaGrass, it has a felt-like backing and I used Roberts indoor/outdoor carpet adhesive and applied it using 1/8" v-notch trowel.
