Yep. Practice, practice, practice...That being said, I wouldn't trust myself to maneuver our last boat now. WAY out of practice by 2 years. Still haven't got the hang of the new boat with twin outboards. Good thing is I'm not hitting the dock as hard as I used to.

I have bolted them to a bulkhead. You can put them almost anywhere they will fit BUT keep in mind what they block access to for service/replacement.

Welcome aboard. "Ideal boat"? EVERY boat is a compromise. Do NOT get fixated on any particular make. Condition and records of maintenance outweigh any particular brand, for the most part IMO. IF you haven't already, read: Boat Search 101

Mr. G. We also had stabilizers on our Cheoy Lee 46'. When I forgot to center the stabilzers she was quite difficult to maneuver. Little to no logical control.
I used to use the rudders quite a bit in tight circumstances. Out of practice so I doubt I could do it now. Usually...

Mr. (Dr.) H. We've used the sticky fly coils as well and have anchored the base to something solid so they don't sway about. I don't know if it would work but "up north" we've had success with mosquito coils which may control the ??black flies...
