    Hatches hinged on both sides?, so are you going to modify the hatches into 2 halves?, I can see the reasoning, in fact I'm amazed that this isn't the norm on all trawlers. My boat is designed for rough water, so all the hatches are heavy aluminum diamond plate and firmly fastened down.
