hi,
i think your main problem is lack of regular circulation. you need to make arrangements to let engine run and get up to temp to allow it to flush itself periodically.
as to winterize i would 1) remove thermostat 2) remove rw pump hose to block and stick into a bucket of rv antifreeze. run engine and you're done when you see pink in exhaust. you might not have to remove thermo if you run engine prior to starting winterization.
this assumes you have unplugged all your internal water passages.
we had 2 sail cats: iroquois and a gemini 105. we have a pdq powercat now.
