When I was young Mother used to make pancakes on our propane stove. If times were good (and the weather was cool -- no refrigeration on our boat back then) we'd have Fried egg sandwiches. They were the best part of mornings...
We would get underway at dawn (or a bit before) Daddy pulled in the anchor as I was too small -- before we got the windlass (non-electric of course) and then I'd take us out. I started running our boat at 10. Before that I was in charge of figuring out compass courses and steering.
Daddy HATED a crooked wake. He would look aft, and if I had to steer he was disappointed -- said I was wasting fuel as I should keep a straight heading. Back then I thought all boats tracked well. Then I bought Seaweed, but that's another story entirely. Suffice it to say, my boat does not go straight ever. NEVER!!!
But I digress...
Later, Mother would bring up fried egg sandwiches. Those were two pancakes with a fried egg (broken yolk/not runny) and bacon stuck to the peanut butter on the top layer. The peanut butter held the bacon in place.
This was when times were good. Otherwise it would be just pancakes. Sometimes syrup, but never butter. Plain old pancakes. I liked mine with peanut butter.
Crispy outside.
Yes, I was a weird child. Most folks seem to prefer soft squishy pancakes that kinda flop around. Enough reminiscing. I believe tomorrow I'll make a couple for myself onboard Seaweed. It's been a long time and I do like pancakes.
