    Faster trawler than just hull speed but seaworthiness?

    You might want to look at Back Coves, Eastbays, Palm Beach and other quality downcast style of boats. Would need to know more about your expectations and use to understand better, but that's a little feedback.

    Aftercooler maintenance

    I would highly recommend installing a fresh water flush system after getting all the coolers back in shape, will certainly extend the life expectancy and also provide FW in the system when shut-down.

    You could always go with your Lithium batteries and keep the bow-thruster separate with it's own smaller charger.     That is not entirely correct many active-stabilizers operate on a PTO off one or both mains and maybe a generator backup. Then there are the passive or fixed type like paravanes which require no hydraulic assistance

    Frankly you are comparing Apples and Turnips, what I mean there is little comparison. The Sea Ray from curb appeal will certainly catch your eye - but as for function storage, longevity, construction there is really no comparison in my humble opinion.
