Another thought on your projects. When removing the exhaust hose from the "transom fitting", BE CAREFUL, the fiberglass on that fitting is not as robust as you might think, and the hose comes off hard. The gods were with me the day I replaced my hose.

My thought is the connection between the two tanks should be on the aft side of the tanks. Two reasons right off; 1: on final fit-up, you wont know if any leaks until fully installed and filled. Between tank connections will be more difficult to monitor. 2: added capacity by placing the tanks...

I don't think I would give up on her quite yet. The scenario sounds to me one of a simple overheating event. Low RPM with temp at 180, then at high RPMs over 200 - makes me think raw water pump impeller went and it overheated. Looks a lot worst than really is with steam spewing from engine...

If you are not going to remove the frames to get the glass out, them maybe the use of a suction cup handle (like used to pull dents out in automotive repair) would help with lifting the panes out of the tracks.
